If we have the ballasts full and then shut the engine off a message appears on the screen that counts down from 4 minutes until auto drain happens!  Is there anyway to turn that off?  It's annoying to have to fill again before continuing to surf.

It is to prevent hydrolock of your engine.  The cooling of your engine sucks water up into it from the exhaust.  Then you start it and bad things happen.  If you are going to be sitting very long empty your ballast first.

Does it drain the PnP or just the Ramfill?

Like Bigcat said, it’s to prevent hydrolock. If we’re going to be sitting for a while, I drain the main tanks in my ZS232 for this reason. The main tank on the ZS is essentially the same thing as the Ram tanks on a Centurion.

Thanks for the feedback.  It just drains the PnP.  I guess I don't understand why I can still have 3000 lbs on board but the PnP makes the difference!  It's not like exhaust comes out of the water.  Also, the engine runs on a closed system, does that make a difference with hydrolock?
