How do you adjust the manual wake plate? How do you get a good intermediate wake?

You just screw the two knobs on each side of the plate - that will pull the wake plate up or pushes it down.

Wake plate all the way up for more wave, all the way down for less wave.

 

With the manual you won't see much difference in either position. So consider ditching the manual and get something like this:
