2001 ski centurion engine starboard modifications

Husband would like to remove the dividers on either side if the engine so he has better access to the engine. There was one screw in a block holding each side down. But they will not come out. So what he is thing about doing is cutting the center and putting a piano hinge in. -

We just bought a new (to us) a 2001 Ski Centurion Elite. we do a lot of our own work and upkeep on or boats. We would like to know what others do to work on or in the engine compartment? Can't remove the dividers. Has anyone have suggestions? Modification if they did? Would love to know and or pictures.
