96 Tru Trac Lapoint 351 Boss w Holly Injection. Hesitation

I have a very well maintained 96 Tru Trac Lapoint with the 351 PCM Boss 315hp I believe with the factory Holley Projection from the era.... (looks like a throttle body).  Some days it wants to hesitate when I mash the throttle which makes it tough getting the big slalom guys out.  It has around 500 hours and runs great otherwise.  Wondering where to start?  Probably a tune up of some sort....plugs, wires etc.  Just not sure about the electronics and fuel injection.  Any thoughts?

If the plugs/wires and cap havent been changed in a while it is a cheap and great place to start. When my 330 mercruiser started missing/sluggish that was what was wrong with it. Cap was corroded the wires were shot, plugs didn't look too bad but replaced them also.
